The acidic environment and lack of oxygen prevent harmful bacteria from forming.
A more advanced preservation technique is pressure cooking, which is used primarily for low-acid foods.
The pressure cooker is a specially designed airtight system that prevents steam from escaping and raises the temperature inside the container to the required level. Pressure canning can be used to preserve a wide variety of foods.
Safe canning requires the right amount of heat for the right amount of time, careful preparation of the food to be canned, and precise salt/sugar and acidity levels.

Boil jars as long as needed
Allow to cool for 24 hours
